WHAT A VEGAN EATS DURING LOCKDOWN | SURVIVING WITH THE BARELY MINIMUM | QUARANTINE IN ARGENTINA My Instagram:

Hi guys! Today Ill show you what I eat in a day surviving with the barely minimum, no fancy or super elaborated recipes, I went to the supermarket and bought all the basics that I need to have all my macronutrients covered and still eat delicious meals.

BREAKFAST

-Simple oatmeal

65gr of oats
1 cup of water
1 teaspoon of cinnamon
1 teaspoon of stevia
1 banana
1 handful of peanuts

I cooked the oats with the water (didn’t use almond milk because in some cities is hard to find or some people don’t make it at home), I added the cinnamon and the stevia to add sweetness.
After 20 minutes in the heat I served it in a plate and added one banana sliced in little chunks and a handful of peanuts.

This breakfast is delicious, easy, fast and super cheap, with ingredients that you can find everywhere, It’ll give you the carbs from the oats and the banana and the good fats and protein from the peanuts.

LUNCH

-Avocado Toast

1 avocado
Whole wheat sandwich bread
1 tomato
1 cucumber
1 handful of roquette

This lunch might be the fastest meal I’ve ever prepared in my life. You just toast the bread slices in the pan until they are crunchy, if you can find a gluten free bread that’s even better, but if not, go to the bread that has only whole wheat flour (the less ingredients your bread has, the better).

Once you have your bread toasted, slice some avocado, tomato, cucumber and roquette and just put it on top, add pink Himalayan salt and black pepper.

SNACK

1 green apple
1 handful of peanuts

DINNER

-Rice and lentils with mushrooms

1 cup of rice
2 cups of lentils
250gr of mushrooms
2 large onions
1 red bell pepper
1 tomato
1 clove of garlic
1 tablespoon of olive oil
I start cooking the lentils first, once they boil, I get rid of that water and put some new one and start to cook them again, then I add the onion, red bell pepper and tomato, pink Himalayan salt and black pepper. I let it boil and then put it in a lower heat with the lid on.

Then I cook the rice, 1 cup of rice with 2 cups of water. Once its boiling I lower the heat and put a lid on, Easy peasy.

For the mushrooms I first put some olive oil in a pan, then add the sliced onions and a clove of garlic, once its golden I add the mushrooms sliced and add salt and black pepper, I cook them until they are soft.
